Avocado White Bean Wraps

Ingredients 2T apple cider vinegar1T canola oil2t finely chopped canned chipotle chiles (or just use the adobo sauce from the can, or a combo of both)¼t salt 2C shredded red cabbage 1 medium carrot, shredded¼C chopped fresh cilantro
1 15oz can white beans, rinsed1 ripe avocado½C shredded sharp cheddar cheese2T minced red onion
Any kind of wraps, flour tortillas, etc. Directions 1. Whisk together vinegar, oil, chipotle chile and salt in a large bowl. Add cabbage, carrot and cilantro; toss to combine.
2. Mash beans and avocado in another bowl with a potato masher or fork. Mix in cheese and onion.
3. To assemble the wraps, spread some of the bean-avocado mixture onto a wrap (or tortilla) and top with some of the cabbage-carrot slaw. Roll up tightly. Stick 2 toothpicks in the wrap to secure. Repeat. Cut wrap in half (in between the 2 toothpicks) and serve on a platter.
